Stuffed Brinjal Achari: This dish made by filling small brinjals with sour and spicy pickles is still eaten with great gusto in homes. This classic recipe is very easy to make. What are the things required to make Bharva Baingan Achari?
In this recipe, 10–12 baby brinjals, mustard oil, half cup onion, two green chillies, one spoon ginger-garlic paste, turmeric, red chilli, dry mango powder, some garam masala and green coriander are used. To make Achari masala, mustard, fennel, fenugreek, coriander, cumin and nigella seeds are lightly roasted and ground. This spice gives the special “sour taste” to this dish.

– Wash small brinjals and cut them like a cross.
– Lightly fry mustard, fennel, fenugreek, coriander, cumin and nigella seeds and grind them coarsely.
– Prepare the stuffing by mixing onion, green chilli, ginger-garlic paste, turmeric, red chilli, dry mango powder, garam masala and prepared pickle masala.
– Carefully fill this masala inside the brinjals.
– Heat mustard oil in a pan and cover the brinjal on low flame and cook for 15-20 minutes.
– Keep turning occasionally. Once it becomes soft, turn off the gas and serve with roti, paratha or dal-rice.
