Ingredients for making rasmalai
Milk – 1.5 liter
Condensed Milk – 1/3 Cup
Lemon juice – 1 tbsp
Sugar – 1 cup
Cardamom – 4
Saffron – 1 pinch
Chopped almonds and pistachios for garnish
Method of preparation for Rasmalai
To make rasmalai, you must first heat the milk in the pan. Then add lemon juice after it comes to a boil and let the milk thicken. Using a cloth, remove the condensed milk and wash it with water to get rid of lemon juice. Your chenna is ready. On the other hand, heat the remaining one liter of milk in a separate pan. Then add saffron, sugar, chopped almonds and cardamom powder to it and boil the milk until it is halved. Now knead the chenna like soft flour. Then, make small shape balls from this mixture and press them with your palms.
Then heat four cups of water in a pan and add one and a half cup of sugar to it. Boil it. When the sugar water starts boiling, then put the prepared balls in it and let it cook for a few minutes. After few minutes, take out the balls and put them in a bowl of milk mixture that you had prepared earlier. Your rasmalai is ready. Now refrigerate it for 5-6 hours or overnight. Garnish it with chopped dry fruits.
