Dhokla, a famous and light dish of Gujarat, is now liked all over the country. If you want a little twist and more nutrition in the traditional dhokla, then Palak Dhokla is a great option. Ingredients to make Palak Dhokla include: 1 cup gram flour, 1 cup fresh spinach puree, 1/2 cup curd, 1 teaspoon ginger-green chilli paste, 1/2 teaspoon turmeric, 1 teaspoon lemon juice, 1 teaspoon eno or fruit salt, 1 teaspoon sugar, salt to taste and 1 teaspoon oil. Mustard seeds, sesame seeds, curry leaves and 2 teaspoons of oil will be required for tempering.
First of all, wash the spinach thoroughly and boil it and after it cools down, make a smooth puree. Now add gram flour, curd and spinach puree in a big vessel and mix well. Add ginger-green chilli paste, turmeric, salt and sugar to it and prepare a thick but runny batter. If the batter seems too thick, you can add some water. Finally add lemon juice.

Now apply light oil in a thali or dhokla plate. Add eno to the batter, mix gently and immediately pour the batter into the plate. Cook in steamer or cooker without whistling for 15-20 minutes. Check by inserting a toothpick in the middle, if it comes out clean then the Dhokla is ready.
Heat oil in a small pan. Add mustard seeds in it, when the mustard seeds start crackling, add sesame seeds and curry leaves. Now pour this tadka over the prepared dhokla. Garnish by adding green coriander or grated coconut on top.
Serve Palak Dhokla with green chutney or sweet chutney. This dish is great for breakfast or a light meal. Apart from being tasty, Spinach Dhokla is rich in iron and easy to digest, which is beneficial for children and adults.
