Ingredients for Palak Kofta
-300 grams spinach
-1 tablespoon salt
-Ginger, Garlic
-Half teaspoon celery
-half teaspoon turmeric
-Half teaspoon red chilli
-Half teaspoon garam masala
-Half teaspoon coriander powder
-3–4 tbsp gram flour
Ingredients for Gravy
-2 teaspoon mustard oil
-1 tsp cumin
-5 black peppers
-2 small cardamoms
-half teaspoon turmeric
-1 tsp Kashmiri red chilli
-1 tbsp coriander powder
-Water as per need
-1 tsp red chilli
-6 garlic cloves
-2 onions
-2 green chillies
-2 tomatoes
-2–3 spoons curd
-Half teaspoon garam masala
-1 tsp Kasuri Methi
How to make Palak Kofta?
Step 1: Prepare Spinach
-First of all, wash the spinach thoroughly and remove the thick stalk. Now chop the spinach finely. Put it in a big vessel, sprinkle one spoon salt on it and leave it for 10 minutes. Spinach will release water due to salt.
-Now squeeze the spinach well and keep the water aside. Keep in mind, do not throw away this water as it will be used in gravy later.
Step 2: Prepare the Masala Base
-Now crush two onions, ginger, garlic and one green chilli. Do not make it a fine paste, just crush it coarsely.
-Now make tomato paste separately and keep it aside.
Step 3: Make Koftas
-Add 1–2 spoons of onion-garlic mixture to the squeezed spinach. Then add celery, turmeric, red chilli, garam masala, coriander powder and gram flour and mix everything well.
-Now make round shaped koftas from this mixture.
Step 4: Make the gravy
-Heat mustard oil in a pan. Add cumin, black pepper and cardamom in it. When they become light golden, add crushed onion to it.
-When the onion is cooked well and turns light golden, then add tomato paste and cook.
-Now add the remaining spinach water to enhance the flavor of the gravy.
Step 5: Cook Koftas without oil
-Place a large steel strainer over the pan and grease it with light oil.
-Now place spinach koftas on it and cover and let it cook for 10 minutes.
-In this method the koftas become lightly crispy even without oil.
-When the koftas are ready, put them in the gravy and sprinkle Kasuri methi on top.
