This traditional and nutritious dish of the villages is made especially in winters. Millet is rich in iron, fiber, magnesium and antioxidants which not only protects from cold but also provides energy.
Millet helps in controlling body temperature. The calcium present in it strengthens the bones. Jaggery, along with providing natural sweetness, purifies the blood and increases immunity. This combination of millet and jaggery is a perfect desi energy food for winters.
necessary materials
Bajra flour 1 cup
grated jaggery
ghee half cup
water 2 cups
Chopped almonds 10 to 12
Chopped cashews 10 to 12
cardamom powder
Method of preparation
Heat water in a pan. Add grated jaggery to it and let it dissolve completely while stirring on low flame. Turn off the gas once it boils. Heat ghee in a separate pan. Add millet flour to it and stir continuously on low flame. Fry until the flour is golden and aromatic, about 8 to 10 minutes.
Slowly add hot water with jaggery to the well roasted flour. Keep the gas on low flame and stir continuously. Halwa will start thickening in a few minutes. Add cardamom powder and chopped nuts to the halwa. Add some ghee on top and mix lightly. serve hot
