In old pans, rust or soap residues remain on the surface, due to which the rotis stick. To remove this imbalance, ‘seasoning’ the pan is necessary.

The basic ingredients of Sakshi’s trick are oil and salt. Salt is a natural mild abrasive. When it is rubbed on a hot pan, it removes the dirt and roughness accumulated on the surface. Plus, salt distributes heat evenly.
The oil gets absorbed into the pores of the pan and forms a thin layer, which is called seasoning. This layer makes the pan non-stick and makes the rotis puff up without burning.
