Spinach Raita is a light, tasty and nutritious dish which holds a special place in home cooking. This raita, filled with the coolness of curd and the nutrition of spinach, is especially liked in summers, but if served in any season, it enhances the taste of the food. To make Palak Raita, first choose fresh and green spinach. About one cup of finely chopped spinach is enough. Apart from this, one bowl of fresh curd, half spoon roasted cumin powder, salt as per taste, a pinch of black salt, finely chopped green chilli and a little red chilli powder are required. First beat the curd well so that it becomes completely soft and the texture of the raita becomes smooth.
Now wash the chopped spinach thoroughly and drain the water. Heat half a spoon of oil in a pan, add spinach and fry lightly for 2-3 minutes. There is no need to cook it much, just the raw smell should go away. If you want, you can also use boiled spinach, but lightly roasting it tastes better. When the spinach cools down, keep it ready to mix in curd.

Now add roasted cumin powder, salt, black salt and green chilli to the whipped curd. If you wish, you can also add some red chilli for taste. While mixing spices in curd, keep in mind that the curd should not be too thin. If the curd is thick then add some water to give the desired consistency to the raita. After this, add cooled spinach to curd and mix well.
Now your nutritious and delicious spinach raita is ready. Before serving, keep it in the refrigerator for 10-15 minutes so that all the flavors get set properly. Spinach Raita goes very well with dal-rice, paratha, pulao or any spicy food. It contains iron, calcium and vitamins in abundance, which provide both energy and coolness to the body.
