Although capsicum enhances the taste of many types of vegetables and Chinese dishes, but if only capsicum and potato curry is made, then its taste is even more delicious.

If guests come suddenly or you don’t feel like doing special cooking, then this vegetable can be prepared quickly. Capsicum does not have to be cooked much and it tastes good when slightly crispy. In such a situation, if you make this vegetable with boiled potatoes, it will be ready quickly.
The recipe is easy
To make this vegetable, first take 2 to 3 potatoes, wash them with clean water and cut them into small pieces. After this, wash 2 capsicum and cut it into small pieces. Now grind 1 onion, 2 garlic cloves and 1 inch ginger in a mixer and make a fine paste. If you want, you can also add tomatoes in it as per your choice.

Now heat 2 spoons of oil in the pan. When the oil is hot, add 1 teaspoon cumin seeds and fry lightly. After this, add prepared onion, ginger and garlic paste and fry well on low flame. When the spices start giving out aroma, add chopped potatoes and when they are 70 percent cooked, add capsicum and cook for about 5 minutes.
After this, add 1 teaspoon turmeric powder, 1 teaspoon red chili powder, half teaspoon garam masala powder and salt as per taste. Mix all the spices well in the vegetables. Now cover and cook for some time, until the potatoes and capsicum become soft. Keep stirring lightly in between so that the vegetables do not burn.

When the vegetables are cooked well, turn off the gas. Your delicious potato capsicum curry is ready. You can enjoy it with roti, rice or puri.
