How to prepare methi pea stuffing?
First of all, wash the fenugreek leaves thoroughly and chop them finely. Boil the peas and grind them coarsely so that the stuffing remains smooth and there is no problem in filling. Now heat some oil in a pan and add cumin seeds in it. When cumin starts crackling, add onion and fry a little. After this add ginger-garlic paste and cook well.
Now add green chilli and chopped fenugreek to it. Fenugreek leaves its water after some time, so cook it till the water dries up. After this add peas and mix both well. Now add turmeric, coriander powder, red chilli powder, salt and garam masala. Cook the mixture for 3-4 minutes so that the flavors of the spices get mixed well. The stuffing is ready – now keep it to cool.
dough kneading process
Take flour in a big vessel. Add salt and 1-2 spoons of oil or ghee in it. Add water little by little and knead a soft dough. Cover the dough and keep it aside for 15 minutes so that it sets and becomes easier to roll.
How to roll and bake paratha?
Now make small balls of the dough. Take a ball and roll it into a light round. Place a spoon of stuffing in the middle. Close the dough by joining the edges and then roll it gently like a paratha. Heat the pan and put the paratha on it. First fry it lightly without oil. Then apply a little oil or ghee on both sides and fry until it turns golden.
