What is required to make Pyagi Kebab?

-Onion-1 kg, thinly sliced
-Lemongrass-200 grams, finely chopped
-Red chilli -1 tsp, crushed
-Green chillies-5, chopped
Ginger-2 tbsp, finely chopped
-Mint-200 grams
-Cumin-1 tsp
-Green Coriander -200 grams
-Nutmeg powder-1/2 tsp
-Corn flour -1½ cups
-Flour-1/2 cup
-Soda-1 tsp
-Salt -as per taste
-Desi Ghee -about 1/2 kg, for frying
for the sauce
-Walnuts-200 grams, crushed
-Lemon juice -Half lemon
-Jaggery-50 grams
-Salt -as per taste
-Black pepper-1 tsp
-Onion-2, thinly sliced
-Tamarind-100 grams
How to make Pyagi Kebab?
1. First of all, spread thinly chopped onions in a big plate, so that the spices get set well.
2. Now rub lemongrass, red chilli, green chilli and ginger gently on these onions.
3. Keep it aside for about 5 to 10 minutes, so that the onion becomes a little soft.
4. After this, mix soda, maize flour, flour, mint, cumin, green coriander and nutmeg in it.
5. Keep in mind – add salt only just before cooking, otherwise the onion will release water and the kebabs may break.
6. Now make small tikki like kebabs from this prepared mixture.
7. Heat desi ghee in a pan and fry the kebabs twice on medium flame, so that they become crispy from outside and cooked from inside.
8. Now to make the sauce, mix lemon juice, jaggery, salt and black pepper in walnuts.
9. Add half a cup of water and boil for 10 minutes.
10. After turning off the gas, add thinly chopped onion into it.
11. Filter the tamarind water and add it to the sauce and mix well.
