The aroma wafting from the kitchen during the winter holidays: the special taste of delicious Mutton Kosha
Jamshedpur: Winter season, holidays at home and the desire to make something different and delicious. In such a situation, if the aroma of mutton kosha rises from the kitchen, then the atmosphere automatically becomes special. Mutton cooking on low flame, fragrant aroma of spices and slight heat of ghee…this is the identity of Mutton Kosha. Now people are making this traditional dish of Bengal with great enthusiasm in their homes also. As delicious as its taste is, the method of preparation is as easy.
The special thing is that Mutton Kosha is not cooked in a hurry but with patience. So let us know the recipe of this dish which is cooked on low flame. First of all, the pan is heated thoroughly and mustard oil is poured into it. As soon as the oil emits light smoke, bay leaves and chopped onions are added to it. It is very important to fry the onion on low flame till it turns golden brown, because this forms the foundation of the thick and juicy gravy.
After this the cleaned mutton is put in the pan. Mutton is roasted while stirring on high flame until its color changes. Then salt, turmeric, red chilli powder, cumin powder and garam masala are added to it. As soon as the spices are mixed, the aroma rising from the pan whets the appetite even more.
Now comes the turn to give more depth to the taste. Add the paste of ginger, garlic, cumin and coriander to the mutton and fry it well on low flame. When the spices start releasing oil and the mutton starts shining after being coated with the spices, then understand that the dish is moving in the right direction. The mutton is allowed to melt in its own juice by adding some water if needed.
In the last step, mutton masala and one spoon desi ghee is added. This ghee gives Mutton Kosha its real royal taste and special aroma. Cover and continue cooking on low flame, until the mutton becomes completely soft and the gravy thickens and starts sticking to the mutton. When hot mutton kosha is served with paratha, tandoori roti or plain rice, the fun of winter holidays doubles.
