Ingredients
Sweet Potato – 500 grams (boiled)
Milk – 2 cups
Ghee – 4 tbsp
Sugar – ½ cup (as per taste)
Cardamom powder – ½ tsp
Cashews, almonds – 2 tbsp (chopped)
Raisins – 1 tablespoon
Saffron – a few threads (optional)
Method of preparation
Prepare Sweet Potatoes:
First of all, wash the sweet potatoes thoroughly and boil them in a pressure cooker for 2-3 whistles. When it cools down, peel it and mash it.
Heat ghee:
Heat ghee in a pan. Add cashews, almonds and raisins and fry until they become light golden. Take them out and keep them aside.
Roast Sweet Potatoes:
Add mashed sweet potatoes in the same ghee and fry on medium flame for 5-7 minutes. This will give good taste to the halwa.
Add milk and sugar:
Now add milk to it and keep stirring continuously so that lumps do not form. When the mixture starts thickening, add sugar and mix well.
Add Flavor:
Add cardamom powder and saffron. Cook the halwa until the ghee starts separating from the sides.
Garnish:
Add roasted dry fruits on top and serve the halwa hot.
