Ingredients
For the dough:
Flour – 2 cups
Spinach puree – ½ cup
Salt – as per taste
Oil – 1 tbsp
For filling:
Finely chopped vegetables (cabbage, carrot, capsicum) – 1 cup
Ginger-garlic paste – 1 tsp
Green chilli – 1 (finely chopped)
Soya sauce – 1 tsp
Salt – as per taste
Oil – 1 tbsp
Step 1: Prepare Spinach Puree
Wash spinach thoroughly and boil it.
When it cools down, grind it in a mixer to make a smooth puree.
Step 2: Knead the Dough
Add salt and oil to flour.
Mix spinach puree and knead a soft dough.
Keep it covered for 15 minutes.
Step 3: Prepare the Filling
Heat oil in a pan.
Add ginger-garlic paste and green chilli and fry.
Add vegetables and cook lightly for 2-3 minutes.
Add soy sauce and salt and mix.
Let the filling cool.
Step 4: Making Momos
Make small balls of dough and roll out thin sheets.
Place the filling in the center and fold the edges to close.
Cook momos in a steamer for 10-12 minutes.
Step 5: Serve
Serve hot spinach momos with chili sauce or tomato chutney. If you want, you can also serve it in tandoori or pan-fried.
