Material
for pulses
Toor dal – ½ cup
Moong dal – ¼ cup
Chana dal – ¼ cup
Onion – 1 finely chopped
Tomato – 2 finely chopped
Ginger-garlic paste – 1 tbsp
Green chilli – 2
Turmeric – ½ tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Salt – as per taste
Ghee – 2 tbsp
Green Coriander – to garnish
for bati
Wheat flour – 2 cups
Semolina – ½ cup
Salt – as per taste
Ghee – 4 tbsp
Water – as per need
Method of preparation
1. Prepare the lentils
Wash all three pulses and soak them for 30 minutes.
Put pulses, turmeric and water in a pressure cooker and cook till 3-4 whistles.
Heat ghee in a pan, fry onion, ginger-garlic paste and green chilli.
Add tomatoes and cook until soft, then add spices.
Add boiled lentils, mix well and cook on low flame for 10 minutes.
2. Prepare Baati
Add semolina, salt and ghee to the flour and mix.
Add water and knead a stiff dough.
Make balls of dough and bake in oven or tandoor at 180°C for 20-25 minutes.
If you want, you can also roast them on a pan on low flame.
Dip the prepared batis in ghee.

Serve hot baati with dal. Pour ghee on top and keep garlic chutney and pickle along with it. This combination is the life of Rajasthani thali.
