Ingredients (for 4–5 people) Green peas (boiled or frozen), 2 cups Potatoes (boiled) – 2 Medium Ginger 1 inch piece (grated) Green chilli – 2 (finely chopped) Coriander leaves, 2 tbsp Gram flour or breadcrumbs, 2–3 tbsp Garam masala, 1/2 tsp red chilli powder, 1/2 tsp chaat masala, 1 tsp cumin powder, 1/2 tsp salt, oil – for frying or shallow frying.
Step by Step Recipe
Step 1: Preparing the peas. First of all, boil green peas lightly. If using frozen peas, just soak them in hot water for 5 minutes and drain. Put boiled peas in a mixing bowl and mash them coarsely. Be careful not to make them exactly like a paste – a slightly grainy texture makes for better kebabs.
Step 2: Preparing the kebab mixture. Mash boiled potatoes and mix them with peas. Add grated ginger, finely chopped green chillies, coriander leaves and all the spices (garam masala, cumin powder, red chilli, chaat masala, salt) into it. Now mix the mixture well. If the mixture seems a little loose then add gram flour or breadcrumbs to make it bindable. Let the mixture set for 5 minutes so that the spices mix well.
Step 3: Shaping the kebabs. Now make small round or tikki shaped kebabs from the mixture. If you want, you can also keep them oval. Place all the kebabs in a plate and keep them in the fridge for 10 minutes – this will prevent them from breaking while frying.
Step 4: Fry the kebabs Heat some oil in a pan. If you want, you can make them in all three ways – shallow fry, deep fry or air fry. Fry the kebabs on medium flame until they become golden and slightly crispy on both sides. When the kebabs are ready, take them out on tissue paper to remove excess oil.
