People are liking the way famous Bollywood choreographer and director Farah Khan prepares this pulao in her kitchen video. The good thing is that this recipe is as easy to make as it looks royal. With a little hard work and adopting the right method, you too can make wonderful Yakhni Pulao at home.
This is the most important step
The most special thing about Yakhni Pulao is its Yakhni, i.e. the aromatic broth prepared from mutton or chicken. For this, first of all wash 500 grams of mutton or chicken thoroughly. Now add mutton, water, ginger-garlic, whole coriander, black pepper, bay leaf, cinnamon, cardamom and some salt in a big vessel and cook on low flame. When the mutton becomes soft and the aroma of the spices dissolves in the water, turn off the gas. Now filter this broth and keep it aside, this is your yakhni.
After this cook rice
Now comes the turn to make pulao. Heat ghee in a pan or heavy bottomed pan. Add whole cumin seeds, bay leaves, cardamom and cinnamon in it. As soon as the aroma comes, add thinly sliced onions and fry till they turn golden. After this add boiled mutton and fry it lightly. Now add washed Basmati rice to it and stir gently for two minutes, so that the rice does not break.
Water measurement is very important
After this comes the most important step, adding Yakhni. Add about double the number of cups of rice as you have cups of Yakhni. Add salt as per taste and cover and let it cook on low flame. When the rice swells and the water dries up, turn off the gas. Add a little kewra water or rose water on top and let it simmer, so that the aroma increases even more. It is very important to keep the measurement of water correct, this makes the rice nutritious.
