Small potatoes – 10 to 12
Paneer – 1 cup grated
Boiled potato pulp – half cup
Onion – 1 finely chopped
Green chilli – 1 to 2 finely chopped
Ginger garlic paste – 1 teaspoon
Garam masala – half teaspoon
Dry mango powder – half teaspoon
salt to taste
Mustard oil – 1 teaspoon
Thick curd – half cup
Gram flour – 2 spoons
Red chilli powder – 1 teaspoon
Turmeric – half teaspoon
Coriander powder – 1 teaspoon
Cumin powder – half teaspoon
Chaat masala – half teaspoon
Kasuri Methi – 1 teaspoon
Step by Step Recipe
First of all, wash small potatoes thoroughly and boil them till 80 percent. They do not have to be completely soft, otherwise they may break while stuffing. When the potatoes cool down a bit, peel them and keep them aside. Now with the help of a small spoon, carefully take out the pulp from between them so that there is space inside the potatoes for filling the stuffing.
Now take a mixing bowl and add grated cheese, drained potato pulp, finely chopped onion, green chilli, ginger garlic paste, garam masala and salt and mix well. This stuffing should neither be too dry nor too wet. Now gently stuff this spicy stuffing inside all the potatoes. Be careful that the potatoes do not burst.
Now take a big bowl and add curd, gram flour, red chilli powder, turmeric, coriander, cumin, garam masala, chaat masala, kasuri methi, ginger garlic paste and hot mustard oil. Now prepare smooth marination by beating this entire mixture well. Tandoori flavor becomes even better with mustard oil, so definitely add it.
Now put the filled potatoes in this marinade and wrap them well from all sides. Try to ensure that the spices coat each potato evenly. Keep them in the refrigerator for at least 30 minutes. Due to this, the spices reach inside the potato and the flavor becomes very good.
Now place a heavy bottomed pan on the gas and add a little oil or ghee in it. When the oil is hot, place the marinated potatoes in a line in the pan. Always keep the flame low so that the potatoes become golden brown from outside and cook well from inside. Keep rotating them a bit in between so that there is a slight tandoori and burnt texture all around. This texture gives the stuffed Tandoori Aloo a dhaba like taste.
