Hariom Rai, who has been involved in the business of murabba and pickles in Azamgarh district for years, says that to make murabba at home, take good quality large sized gooseberries, soak them in water and lightly pierce them with a steel or copper tip (do not use iron). After this, prepare about 7 kg sugar syrup for 5 kg Amla. While boiling wet Amla, adding lemon juice or citric acid to the water makes Amla soft. After boiling, put the gooseberry in the syrup and keep it soaked for about three days and keep heating the syrup lightly in between, so that the juice gets absorbed into the gooseberry properly.
