In this recipe, guarphali is boiled and mixed with gram flour and Rajasthani spices to make a crispy and delicious vegetable. Lightly roasted gram flour mixed with spices gets coated with guarphali and the aroma of Rajasthani food is felt in every bite. How to make Guarfali vegetable
1. Preparing Guarphali:
-Wash the guarphali thoroughly.
-Remove its edges and fibers.
-Now cut it into small pieces.
2. Boiling Guarphali:
-Put guarphali, some salt and water in a pressure cooker and boil for 1 to 2 whistles.
-Turn off the gas and after the pressure is released, take the pods out in a strainer and cool them slightly.
3. Roasting Gram Flour:
-Heat the pan, add gram flour and fry on low flame till it becomes light golden and aromatic.
-After frying, take out the gram flour in a plate.
4. Preparing the Masala:
-Heat oil in the same pan.
-Add celery and asafoetida.
-Now add crushed garlic and green chillies and fry for 30 seconds.
-Add turmeric, red chilli powder, coriander powder and vegetable masala/garam masala.
-Add some water and fry the spices on low flame until the oil starts separating.
5. Making Vegetables:
-Add roasted gram flour to the roasted spices and mix well.
-Add some water and stir so that the gram flour mixes well with the spices and lumps do not form.
-Now add boiled guarphali and salt.
-Mix everything well so that the masala gets coated well on the pod.
-Finally add mango powder, mix and cover and let it cook for 2-3 minutes.
6. Serving Tip:
-Turn off the gas and add green coriander on top.
-Serve it hot with roti, paratha or bajra roti.
