Carrot Halwa Recipe: The pleasure of eating carrot halwa in winter is different. But making halwa in the traditional way is a bit difficult for many people. Grating carrots, cooking milk continuously and working hard for hours is not something anyone can do, but YouTuber and cooking expert Bharat’s kitchen has shown an easy and time-saving method. In this recipe there is no need of grating carrots or sugar. You just have to give 2 whistles of your pressure cooker and the halwa is ready. In this recipe, carrot pieces are cooked directly and jaggery powder makes the halwa sweet and tasty. There is also a special method to make the milk thick and granular, due to which the texture of the halwa becomes exactly like khoya. Not only saving time, but the taste of halwa also remains the same as the traditional method. The tadka of dry fruits in it makes the halwa more attractive. Preparing to cook carrots in cooker
-The first step in this recipe is to cook the carrots directly in the cooker. Take one and a half kilos of red and thin carrots, wash them, peel them and remove the root part. Cut the carrots into big pieces without rubbing them.
-Heat some ghee in the cooker and add carrots to it and fry lightly. During this time add crushed cardamom and saffron. Adding a little salt will also help in softening the carrots quickly. Then add some water, close the lid of the cooker and cook till 2 whistles.

-While carrots are cooking, prepare milk for halwa. Put one kilo of full fat milk in a vessel and boil it and keep stirring it occasionally. Thicken the milk until it remains about 30-40 percent.
-To make condensed milk slightly grainy, add 5-6 drops of vinegar to it. Due to this the milk will not curdle, but the halwa will get a khoya like texture. This method replaces traditional khoya.
Mashing Carrots and Milk
-After the steam comes out of the cooker, open the lid and lightly cut the carrots with a spoon. Do not mash it completely, just break it a little. Keep the gas on and now pour condensed milk into the carrots. Mix both well and continue cooking.
-When the carrots become completely soft, mash the carrots completely with a masher or churner. Fry the halwa until the mixture starts leaving the sides of the pan.
Jaggery powder instead of sugar
-The specialty of this recipe is that it does not require sugar. Add jaggery powder to the halwa. About 375 grams of jaggery is enough for one and a half kilo carrots. If carrots are sweet then you can reduce jaggery also.
-Add jaggery to the halwa last and cook for 2-3 minutes so that it melts and mixes well. This makes the halwa slightly sweet and tasty.
Dry Fruit Tadka and Serving
To make the halwa attractive, lightly fry the dry fruits in ghee. Later mix them in halwa. The carrot halwa made with your hard work is ready without sugar, easy and tasty.
