Ingredients for making Carrot Halwa
-Carrot (medium) – 650 grams, grated
-Milk – 4 cups
-Ghee – 4 tablespoons
-Sugar – 10-12 tablespoons (as per taste)
-Cardamom powder – 2 teaspoons or 5-6 green cardamoms ground
-Cashews – 10-12, chopped
-Almonds – 10-12, chopped
-Raisins – 2 tablespoons
-Saffron – 1 pinch (optional)
How to make Carrot Halwa
-1. Cooking Carrots and Milk
Add grated carrots and milk in a deep pan. Cook it on low flame. Keep stirring the halwa in between so that the carrots get cooked properly and the milk reduces gradually. This makes the halwa creamy and soft.
-2. Mixing ghee, sugar and cardamom
When the carrot and milk mixture reduces to half, add ghee to it and mix well. Now add sugar and cook till it dissolves. After this add cardamom powder and cook the halwa on low flame. Keep stirring occasionally so that the halwa does not stick to the bottom and becomes thick.
-3. Adding dry fruits and saffron
When the halwa becomes thick and the milk almost dries up, add cashews, almonds, raisins and saffron to it. Mix well and turn off the flame. Your delicious carrot halwa is ready. It can be served hot or cold.
