As soon as winter comes, the pleasure of eating carrot halwa is different, but if we talk about black carrot halwa, then both its taste and aroma are special. Black carrot is not only unique in colour, but the flavor of its halwa is also very thick, creamy and full of aroma. Let us know how to make this wonderful halwa at home in a fun and easy way.
First of all, wash the black carrots thoroughly, peel them and then grate them. The finer you grate the halwa, the better it will be. Now add one cup of milk in a big kadai or non-stick pan and heat it. As soon as the milk starts heating, add grated carrots to it. Now let it cook slowly on medium flame. This is the time when the true color and aroma of halwa comes out.
After some time, the carrots will start cooking properly in the milk and the mixture will become a little thick. Now add about two to three spoons of ghee in it and stir well. As soon as ghee is added, both the aroma and taste of the halwa double. Keep stirring the entire mixture continuously so that it does not stick to the bottom and the halwa becomes soft like cream.

Now is the time for sweetness. Add sugar as per taste in it. Keep in mind that black carrots are slightly less sweet than normal carrots, so you can add a little more sugar. As soon as sugar is added to the halwa, it will acquire a beautiful shine and its color will become even darker. If you want, you can also add some cardamom powder at this step so that the aroma of the halwa becomes more enhanced.
Finally, add cashews, almonds and raisins and mix gently. Cook it while stirring for 4-5 minutes so that the flavor of dry fruits dissolves completely in the halwa. When ghee starts separating from the pan, understand that the halwa is completely ready. If you are making halwa with milk then you will have to add milk again and again, take only full cream milk. When the carrots are cooked, add khoya to it. This is optional but it increases the taste a lot.
Now your hot, aromatic and very tasty black carrot halwa is ready to serve. Be it family, guests or yourself, this dessert wins everyone’s heart. Make sure to eat it in winters and enjoy its unique taste!
