Method of making Kada Prasad
First of all, take a deep bottom pan and add equal amount of desi ghee in it. Keep in mind that the amount of ghee in Kadha Prasad is not reduced at all, because that is what brings its aroma and real taste. As soon as the ghee becomes slightly hot, add wheat flour to it and start frying it on low flame. It is very important to keep stirring the flour continuously, otherwise it can burn quickly. After frying for about 10-12 minutes, the flour will turn golden brown and its aroma will also start coming. This is the time when the flavor of the Prasad starts developing. When the flour is roasted well, slow down the gas.
Now mix equal amount of sugar and water in a separate vessel and boil. In Gurudwaras the ratio of sugar and water remains 1:1, due to which the syrup becomes absolutely light and transparent. When the water starts boiling and the sugar dissolves completely, keep it ready to pour into the pan. Keep in mind that while adding the syrup to the flour, the flame should be very low, because the mixture may suddenly boil and come up.
Simple, pure and delicious
Slowly pour the syrup into the pan and stir continuously with a large wooden spoon. As the syrup gets mixed with flour and ghee, the mixture starts becoming thick and shiny. Within a few minutes it becomes uniform and takes the texture of halwa. The real look of Kada Prasad comes when the ghee starts separating from the sides and the mixture looks smooth.
Now turn off the gas and let the Prasad remain covered for a minute or two. This enhances its taste even more. While serving, it is served hot as its texture may become a bit hard once it cools down. Kada Prasad like Gurudwara is ready – simple, holy and extremely tasty.
