Gobhi Ka Bharta Recipe: Gobhi Ka Bharta is a delicious and healthy dish, which can be easily made at home. In this, boiled or roasted cabbage is prepared by mixing it well with spices. This recipe is served with plain rotis or parathas and is a popular Indian dish.
Cabbage Bharta doubles the taste of food in the winter season. This bharta made from fresh cauliflower is not only delicious in taste, but its aroma also doubles the appetite. The smoky flavor of cauliflower roasted on the stove in the cold breeze adds such a desi flavor to it that its taste satisfies the soul.
Cauliflower Bharta is not an ordinary vegetable, rather it is a special recipe. It is made by roasting it on low flame, which removes the rawness of the cabbage. The special seasoning of mustard oil, cumin, garlic and red chilli gives it the aroma of local soil.
Villager Shanta Devi shared an easy method of making Cabbage Bharta. She told that to make Cabbage Bharta, first of all the necessary ingredients have to be taken. The essential ingredients are cauliflower (boiled or roasted), onion, tomato, garlic, one or two green chillies, a small piece of ginger, mustard oil, cumin, red chilli powder, turmeric, garam masala, salt and green coriander.

First of all, wash the cauliflower and cut it into big pieces. Now it has to be roasted directly on the stove or on a pan in low flame, which will give it a light smoky flavor. After it cools down, mash the cabbage well with hands or with the help of a masher.
Now mustard oil has to be heated in the pan. After the oil is hot, add cumin seeds in it. As soon as the cumin seeds crackle, add finely chopped garlic, ginger and green chillies and fry till it turns golden. After this add onion and cook till it turns light brown. Now add tomato, turmeric, red chilli and salt and fry till the spices leave oil.
Add mashed cabbage to the prepared spices and mix well. And now cook on low flame for 5 to 7 minutes. After cooking, add garam masala and finely chopped coriander and take it off the stove. It becomes even more spicy by adding garam masala and green coriander.
Along with taste, Cabbage Bharta is also very beneficial for health. Cauliflower is rich in fiber, which strengthens the digestive system. Vitamin C and antioxidants present in it increase the body’s immunity, thereby preventing problems like cold and cough that occur in winter. Bharta made in mustard oil provides relief from joint pain and maintains warmth in the body.
