Yes, you must have cooked and eaten many types of dishes, but do try jaggery rice at home once in winter. Making jaggery rice is not only very easy but it also tastes very tasty. While jaggery brings sweetness to the rice, some whole spices add a nice aroma to it. Normally almonds are added to it but if you want, you can add dry fruits as per your wish.

Some ingredients are required to make jaggery rice. These are Basmati rice, saffron – 15 to 20 strands, desi ghee, milk, coconut flakes 10 pieces, turmeric powder, cinnamon, green cardamom, bay leaves, jaggery, water, cashew nuts, raisins, almonds etc.
To make jaggery rice, first put dry rice in a big bowl, wash it thoroughly and soak it for 10-15 minutes so that the rice swells and the grains remain separate. Meanwhile, soak saffron in milk in a small bowl.
Now heat ghee in the cooker and add fennel and all the other spices in it. Then add saffron milk and cook on low flame as the milk may curdle. Now add jaggery to it and cook on low flame for 3-5 minutes until the jaggery melts and turns into syrup, but do not overcook it. Now add cashews, raisins and almonds and fry lightly so that the taste and aroma increases.
Now filter the water of soaked rice and add it to the jaggery-masala mixture. Now add 2 cups of water and close the lid of the cooker and cook for 2 whistles on medium flame and then turn off the gas. Let the pressure release and open the rice. Serve the prepared hot jaggery rice with coconut flakes and eat it with pleasure.
