Reasons for bread breaking
Bajra flour being too dry or too wet.
Rolling the roti immediately after kneading the dough.
Rolling with wrong technique.
The pan is too hot.
The right way to make millet roti
Material
Bajra flour – 2 cups
Lukewarm water – as per need
Salt – as per taste
Ghee – to serve
Step 1: Knead the dough
Take millet flour in a big vessel.
Add salt and mix lukewarm water little by little.
Knead the dough well. It will remain a little loose, so do not add too much water.
After kneading, keep it covered for 10 minutes. This will set the dough and make it easier to roll.
Step 2: Rolling Technique
It is difficult to roll millet roti because it does not contain gluten.
Lightly flour a plastic sheet or butter paper.
Make a ball of dough and pat it with your hands to give it a round shape.
If you want, use a rolling pin, but it is easier to make it by hand.
If the roti is tearing then you can add some wheat flour to the dough (10-15%).
Step 3: Bake
Heat the pan on medium flame. Too hot a pan can tear the roti.
Carefully put the roti on the pan.
Bake from both the sides and serve with light ghee.
Tips to make roti perfect
Use only lukewarm water while kneading the dough.
Do not make the roti too thin while rolling.
Before putting it on the pan, set the roti by pressing it lightly with your hand.
Eat the roti immediately, if kept for too long it becomes hard.
How to serve?
Serve bajra roti with jaggery and ghee, garlic chutney, or mustard greens. This combination provides both taste and health pleasure in winter.
The problem of bursting of millet roti can be easily solved with the right technique and a little care. Lukewarm water, correct rolling method and baking on medium flame will make the roti perfect. Do try Bajra Roti this winter and enjoy your health.
