Ingredients for making chaat masala-
Whole coriander – 1 bowl
Cumin – 1 bowl
Whole black pepper – 2-3 tbsp
Fennel – 2 tbsp
Ajwain – 2 tbsp
Mint leaves – 1/2 cup
Black salt – 50 grams
Dry red chilli – 8-10
Dry ginger powder – 3-4 tbsp
Mango powder – 50 grams
Citric Acid – 2 tbsp
Sugar powder – 3-4 tbsp
Easy way to make chaat masala (step-by-step)-
1. Roast Dry Spices:
Heat a pan on medium flame. Add whole coriander, cumin, whole black pepper, celery and dry red chilli. Lower the flame of the gas and fry the spices while stirring continuously, until a light aroma starts emanating from them. Be careful not to burn the spices.
2. Chill the Condiments:
Take out all the roasted spices in a bowl and let them cool completely. This will make grinding easier and the taste will also be good.
3. Crunchy Mint Leaves:
Now add fresh mint leaves in the same pan and fry on low flame. When the leaves become completely dry and crisp, then turn off the gas and let them cool down.
4. Grind the spices finely:
Add cooled spices and mint leaves in the mixer. First grind it once or twice and make a thick powder. Then add black salt and citric acid to it and grind it again, so that very fine and smooth chaat masala is prepared.
5. Mix the remaining powder:
Now take out the prepared base masala in a big bowl. Add dry ginger powder, dry mango powder and a little sugar powder to it. Mix everything well, so that the taste is completely balanced.
6. Store:
When the prepared aromatic chaat masala cools down, store it in an airtight glass jar. It will remain fresh and flavorful for a long time.
