Spinach cutlets are a very tasty and nutritious snack in the winter season. To start making these, first of all the fresh spinach leaves should be washed thoroughly with clean water, so that the dust and soil present in them gets completely cleaned. After this, turn on the gas and place a big vessel on it and pour sufficient amount of water in it. When the water becomes slightly hot, add spinach leaves to it and let them boil well for about 10 minutes on medium flame. Boiling spinach softens it and creates an excellent base for cutlets.
After boiling the spinach leaves, let them cool for some time. After this, put these leaves in a mixer jar and prepare a fine paste. Now again place a vessel on the gas and add potatoes as per requirement and boil. When the potatoes are boiled well, take them out of the water and keep them to cool. When the potatoes cool down, peel them and mash them well. Finally, add prepared spinach paste to these mashed potatoes. This mixture will provide great taste and texture to your cutlets.
After the mixture is ready, now add grated ginger, finely chopped green chillies and fresh coriander to it. After this, to increase the taste and aroma, add red chili powder, coriander powder, spicy chaat masala, garam masala and salt as per taste. Mix all these spices well in the mixture. Finally, add one spoon of bread crumbs for binding and mix everything well, so that the moisture in the mixture reduces and the cutlets can be given the desired shape.

To give the final touch to the prepared mixture, now take some flour in a bowl and prepare a medium thick slurry by slowly adding water to it. After this, take small balls from the spinach and potato mixture and shape them into biscuits or any beautiful shape of your choice. First dip these cutlets thoroughly in flour solution and then immediately place them in a plate of bread crumbs and wrap them from all sides. This layer of bread crumbs will make the cutlets very crispy and golden on top while frying.
Finally, heat oil in a pan and carefully drop the prepared biscuit shaped cutlets into the hot oil. Fry them on medium flame until they become golden and crunchy from outside. When they are fried well, take them out of the oil. In this way your delicious, spicy and nutritious spinach cutlets are ready.
