Ponk is a very popular winter snack of Gujarat, especially Surat, which is prepared from green sorghum and is especially eaten during the winter season. Jowar grains are cut and lightly roasted before they are fully ripe, due to which its taste becomes slightly sweet and the aroma becomes very special.
The demand for hot and nutritious snacks automatically increases during the winter season, and in such a situation, my favorite winter snack is Ponk. Ponk is made from green sorghum, which is harvested before the grains are fully ripe. After this, it is prepared by lightly roasting it, due to which its taste becomes slightly sweet and the aroma becomes very special. Ponk is considered a winter delicacy in Gujarat, especially Surat, and is delivered fresh from Surat to Mumbai daily during the season. The aroma of fresh ponk and its hot taste provide a special comfort in winters. This snack is not only delicious in taste, but is also considered very beneficial from health point of view.
The process of making Ponk is very easy and it can be prepared easily even at home. First of all, take fresh green jowar i.e. Ponk and if it is not already roasted, then fry it lightly on low flame. Take care that the grains do not burn, just become slightly hot and aromatic. Now take it out in a big bowl. Add salt as per taste and squeeze fresh lemon juice on top, which further enhances its taste. After this, add Makhana sugar balls in it, which give light sweetness as well as crispness. Now add sev to it and add one spoon spicy garlic chutney. Finally add boiled green gram and mix everything well gently. Apart from giving a different taste to the green gram ponk, it also makes it more nutritious.
