Carrot Burfi Recipe: Carrot Burfi is better in taste than carrot halwa and softer in texture. It is very easy to make it at home. In this, a mixture of grated carrots, mawa, poha powder, sugar and ghee is used. It is prepared by adding cashew nuts, almonds, pistachios and makhana. After it cools down, it is cut into the shape of barfi and served. This sweet is not only tasty but also beneficial for health.
We often get to eat carrot halwa, but we rarely get to eat carrot barfi, even though it is better than carrot halwa in taste. The recipe for making carrot barfi is very easy. First of all, wash the carrots thoroughly with hot water and then remove their peels. After this, grate the carrots with a thin grater, so that the carrots can cook easily.
Now place the cooker on gas and add grated carrots in it. Add 4 spoons of ghee and 2 cups of milk in it. After about two whistles in the cooker, cook it on low flame for 10 minutes. After this prepare poha powder. Filter the poha and grind it finely. Meanwhile, to make Mawa, thicken about 1 liter milk on low flame.
After making mawa from milk, mix carrots and mawa and cook on low flame for about 15 minutes. Now add sugar and poha powder as per taste. After this add grated coconut. Then add almond powder, cardamom powder and 5 spoons of ghee and mix all the ingredients well.

After this, to set the carrot barfi mixture, apply ghee on a clean plate and spread this mixture on the plate. Then grind cashews, almonds, pistachios and makhana coarsely and pour it over the mixture. When this mixture cools down, cut it into barfi shapes.
After this entire preparation process, carrot barfi will be ready. Barfi made from carrots is very soft and tastes great. Along with taste, it is also beneficial for health. Carrot sweet is considered healthy in winter and it can be made easily at home.
