To make Gulgul Bhajiya, first prepare the necessary ingredients-
wheat flour
Jaggery or sugar (you can use any sweet)
Fennel
cardamom powder
baking soda
oil for frying
How to make Gulgul Bhajiya
• If you are making it from jaggery, then first break the jaggery into small pieces and dissolve it in water, so that sweet water is prepared.
• After that, take wheat flour in a big vessel, add fennel and cardamom powder to it, the aroma of fennel doubles the taste of Gulgul Bhajiya. Now add sweet jaggery water little by little and mix the flour well and prepare the batter. The solution should neither be too thick nor too thin. Now add a pinch of baking soda to it and mix it well again.
• Now to fry Bhajiya, turn on the gas and let the oil heat in the pan on low flame. When the oil gets hot, make small round dumplings with the help of hands and put the batter in the oil. Fry them on low flame for 4 – 5 minutes, till they turn golden red. Then with the help of a strainer, take them out and keep them in a plate.
• Your traditional Chhattisgarhi Gulgul Bhajiya is ready, serve it to family, friends or guests, as soon as it comes out of the oil, Gulgul Bhajiya becomes lightly crunchy and due to jaggery, it appears red like Gulab Jamun. It tastes very good when eaten hot, but its specialty is that it tastes even more delicious when cooled, hence many people eat it only after it cools completely.
