In this recipe, instead of traditional potato masala, spinach, paneer and cheese have been used. Which provides nutrition along with taste. This dosa will not only be liked by children, but is also great for those who want to eat something light, crispy and nutritious in the early morning. By mixing semolina and gram flour, its batter is made instantly and the freshness of spinach gives new life to it.

How to prepare instant dosa batter
First of all, mix one and a half cup of fine semolina and half a cup of gram flour in a big vessel. Now add two spoons of curd and salt in it. Keep adding water little by little so that a smooth, runny batter is prepared. Try to ensure that there are no lumps in it. If you want, you can improve the color of the batter by adding a little sugar powder.
Now keep it covered for 10 minutes. Meanwhile, the rava will swell and become thick enough to make dosa.
How to bring the pan to the right temperature
Dosa is cooked well only when the pan is neither too hot nor too cold. Heat the pan on medium flame. When it becomes completely hot, sprinkle some water and wipe it with a cloth. This step brings the pan to the correct temperature.
Now pour the batter in the middle of the pan with a bowl or spoon and spread it by rotating it rapidly. This will prepare thin, crisp and beautiful dosa.
Butter and spices tadka
When the dosa spreads, apply a little butter or oil on its sides and top. This makes the surface crispy.
Now add finely chopped garlic, ginger-green chilli paste, chilli flakes and some green coriander on top. After this, spread finely chopped spinach in good quantity. If you wish, you can also add lightly crushed red chilli.
Cheese, Paneer and Chaat Masala
Now sprinkle some sambar masala on the dosa, then add grated paneer and cheese on top. Paneer makes dosa rich in protein and cheese makes its texture more soft.
To make the taste fresh, sprinkle some chaat masala and some salt. Spread the stuffing evenly on half the surface of the dosa and apply a little butter on top and cook on medium flame.
Fold the dosa and serve
When the dosa becomes golden from below and its edges start rising from the pan, then fold it from the middle and give it a roll-like shape.
Now your instant palak dosa is ready. Serve it with coconut chutney, tomato chutney or hot sambar.
