First of all, wash and peel the carrots thoroughly and then grate them. Now heat desi ghee in a pan and add grated carrots to it and fry well on medium flame. Fry it until a light aroma starts coming from the carrot and its color changes slightly. After this, add milk to it and let the carrots cook in the milk until they melt. During this time, keep stirring the milk continuously so that it does not stick to the bottom of the pan.
On the other hand, wash some rice and make a fine paste in a mixer with milk. When the carrots and milk are cooked well, put this rice-milk paste in the pan and let the kheer thicken while stirring continuously on low flame. After this, add cashew and sugar candy powder, add cardamom powder and cook for some more time. Finally add chopped dry fruits, mix the kheer well and turn off the gas.
