Know what ingredients are needed before the recipe
Before making this recipe, you will need ground spices, 2 tbsp dried coriander seeds, 2 tbsp fennel seeds, 1 tbsp cumin, for the filling of Kachori. 3 tbsp ghee, 1 tsp fennel seeds, 1 tbsp ginger, peeled, chopped, 1 ½ cup green peas, ¼ tsp asafoetida, ½ tsp degi red chilli powder, salt as per taste, 3 green chillies, chopped, 2 tbsp prepared ground masala, ½ tsp black pepper powder, ½ cup water, for kachori dough, 2 cups all-purpose flour, 4 tbsp ghee, salt as per taste, as required Water, for instant pickle, ¼ cup mustard oil, 1 tsp fennel seeds, 1 tbsp mustard dal, 10-12 fresh green and red chillies, chopped, 1 inch ginger, julienned, 2 tbsp vinegar, salt as per taste, 1 tbsp sugar
Do this work in the first step
Add dried coriander seeds, fennel seeds and cumin seeds in a pan and fry them well and then grind them finely. Heat a pan, add ghee, fennel, ginger, green peas, asafoetida, degi red chilli powder, salt, green chilli and water and mix well, then cover and let it cook well. After cooking, add prepared masala and black pepper powder and cook till it becomes soft. Now mash it well and keep it aside and let it cool.
Prepare pickle like this
In a big vessel, add flour, ghee, salt as per taste and water as required and knead a soft dough. For instant pickle, heat a pan, add mustard oil, fennel and mustard dal in it. When it starts crackling, add ginger, red chilli and green chilli and fry for a minute. Then add vinegar, salt and sugar and mix well and your pickle is ready.
Now this method of frying in oil
Make lemon sized balls and take one ball in your hand and flatten it, add one spoonful of filling in it and close it. Apply some ghee/oil on the rolling pin and the plate and roll it well, but do not roll it too thinly. Repeat the same process with all the pieces. Fry them in hot oil until they become golden brown on both sides. With this your Kachori will be ready, after which you can serve this Kachori with tea to your guests.
