In winter, one often feels like eating sweet and sour food and in such a season, tomato launji takes care of both taste and health. This launji with hot paratha or roti gives warmth to the body in cold weather. The mild sourness of tomatoes and sweetness of jaggery further enhances its taste.
Making Tomato Launji is very easy and it does not take much time. This dish, prepared with less spices, is light and easy to digest. Due to availability of fresh and juicy tomatoes in winter, both the taste and color of Launji become excellent.
To make Launji, first wash the tomatoes thoroughly. Then chop them finely so that they melt quickly while cooking. Finely chopped tomatoes give good thickness to the launji. If the tomatoes are too sour, the sweetness can be easily balanced later.

Heat oil or ghee in a kadhai or pan. Add mustard, cumin, nigella, fennel and asafoetida in it. As soon as the spices start crackling and the aroma starts coming out, understand that the tadka is ready. This tadka gives the special taste and desi aroma to launji.
Now add chopped tomatoes in the tempering. Also add red chilli powder, dry red chilli or green chilli and stir well. Cook the tomatoes for 2-3 minutes on medium flame. After this add coriander powder, salt and some water and let the mixture cook well.
When tomatoes become soft, add sugar or jaggery to it. Adding jaggery improves both the taste and color of launji. Now cook it on low flame till it thickens and keep stirring in between so that the launji does not stick to the bottom and the taste remains uniform.
After turning off the flame, add fresh coriander leaves on top. Tomato launji is ready. It can be served with paratha, roti or puri. It is also good to keep in tiffin. In winter, this Launji is delicious and also makes the mind happy.
