Ingredients to make carrot barfi
-Carrot: 1 kg (red, wash well and peel)
-Sugar: 1 cup (or as per taste)
-Desi Ghee: 3–4 tbsp
-Milk powder: 1 cup
-Cardamom powder: half teaspoon
-Chopped cashew-almonds: to decorate
-Milk: half cup
How to make carrot barfi
1. First of all, peel the carrots and cut them into small pieces. No need to rub now.
2. Add 1 spoon ghee in pressure cooker and add chopped carrots. Add half cup milk and let it boil for 2 whistles.
3. After the whistle comes out, open the lid. The carrots will have become soft. Mash it – it will become like grated carrot.
4. Turn on the gas and add sugar to it. Sugar will release water, cook it until the water dries up.
5. Now add remaining ghee and milk powder. Fry it until the mixture starts leaving the pan. Add cardamom powder and mix well.
6. Spread the mixture in a lightly greased plate. Sprinkle cashew-almonds on top. Let set for 1–2 hours.
7. After setting, cut into desired shapes.
