Doda Barfi is a traditional sweet of North India, which is especially made during festivals and weddings. Its taste is thick and slightly crisp. Necessary Materials
Full cream milk – 1 liter
Khoya – 250 grams
Sugar – 250 grams
Desi Ghee – 4 tbsp
Semolina – 50 grams
Chopped dry fruits (almonds, cashews, pistachios) – ½ cup
Cardamom powder – ½ teaspoon
Method of preparation
boil milk
First of all, pour milk in a heavy bottom pan and boil it on medium flame. Keep stirring the milk continuously so that it does not stick to the bottom.
Mix semolina and khoya
When the milk thickens a little, add semolina to it and mix well. Adding semolina gives a slight crunch to the barfi. After this add khoya and keep stirring continuously.
add ghee and sugar
When the mixture starts thickening, add ghee and sugar to it. After adding sugar, keep stirring the mixture continuously so that it does not burn at the bottom.
Mix dry fruits and cardamom powder
When the mixture thickens and starts leaving the pan, add chopped dry fruits and cardamom powder to it. This will give taste and aroma to the barfi.

Now put the mixture in a plate or tray greased with ghee and spread it evenly. Garnish with some dry fruits on top. Let it cool and then cut it into desired shapes.

To make Doda Barfi more crispy, you can slightly increase the amount of semolina.
Keep it in an airtight container, it remains fresh for 4-5 days.
