But, do you know that some vegetables can have a poisonous effect on the stomach when reheated. Superintendent of Rewa Super Specialty Hospital, Dr. Akshay Srivastava explains that some vegetables contain elements which, when heated repeatedly, break down and form harmful compounds. Of these, the highest risk is in leafy vegetables and potatoes. The nitrates present in them get converted into nitrites when heated again. This can cause problems like methemoglobinemia, in which the oxygen capacity of the blood reduces. This can cause dizziness, weakness, vomiting and even blue-skin syndrome in children.
