Of these, the highest risk is in leafy vegetables and potatoes. The nitrates present in them get converted into nitrites when heated again. This can cause problems like methemoglobinemia, in which the oxygen capacity of the blood reduces. This can cause dizziness, weakness, vomiting and even blue-skin syndrome in children. There is also a risk of food poisoning.
spinach: Many times at home, we take out the leftover vegetables from the fridge and heat them the next day, but it is not right to reheat every vegetable. Spinach is also one such vegetable. On reheating it, nitrite increases rapidly and can cause serious harm to health.
Potato: The starch present in potatoes starts breaking down when heated again and forms toxic compounds. This may increase the risk of food poisoning. Therefore, one should not make the mistake of reheating vegetables including potatoes.
mushroom: Mushroom is considered a very beneficial vegetable, but if eaten after reheating it can cause serious harm. The proteins of mushroom change when reheated and problems like heaviness in stomach, gas and vomiting can occur.
Eggs: If you are making egg curry or adding it to gravy, it is better to eat it immediately. Reheating egg curry or egg bhurji is harmful because the protein can get damaged.
