Hyderabad. Kunafa, the famous sweet of Arab countries, is now being liked a lot in Hyderabad also. This traditional Arabic dessert is fast winning people’s hearts due to its unique taste and special texture. The combination of thin kneaded dough, soft cheese and sugar syrup makes it a very special sweet. In Arab countries, it is made on festivals and special occasions, but now its taste has become popular in big cities of India also.
To make Kunafa, mainly Kunafa dough, cheese filling and sweet syrup are required. The dough is like thin vermicelli which is mixed with ghee to form a crispy base, then a layer of cheese is added in the middle and another layer of dough on top and it is baked. Let us know the complete method of making it at home.
These materials are needed
Some ingredients are required to make Kunafa. Necessary ingredients include Kunafa dough 500 grams, melted ghee or butter 250 grams, sweet cheese 500 grams, sugar 2 cups, water 1 cup, lemon juice half teaspoon, rose water or kewra water 1 teaspoon, pistachios are required as per requirement for garnish.
Method of making syrup
First of all, put sugar and water in a vessel and keep it on medium flame. As soon as the sugar dissolves completely and the mixture starts boiling, add a little lemon juice to it. This prevents the syrup from freezing and provides the right consistency. Now boil this syrup for about 5-7 minutes, until it becomes slightly thick. Turn off the gas and add rose water or kewra water to it and keep it to cool.
How to prepare Kunafa Dough
Open the Kunafa dough thoroughly with your hands and break it into small pieces. This process is necessary so that the texture remains uniform after baking. After this, add melted ghee or butter to it and mix well, so that every fiber is completely coated with ghee. This makes Kunafa crispy from outside and soft from inside.
How to assemble
Grease a baking tray well with ghee. Now spread half of the greased dough evenly in the tray and tighten the base by pressing with the help of hands or a bowl. After this, spread the grated cheese evenly on this base, but take care that the cheese does not reach the edges, otherwise it may burn during baking. Now spread the remaining portion of dough gently over the cheese layer and press it a little so that the structure remains strong.
