To make this, you need 500 to 600 grams of pot liver, finely chopped onion, ginger-garlic paste, turmeric powder, bay leaf, coriander powder, salt, oil, water and green coriander leaves. First of all, buy fresh and clean liver from the chicken shop. Then bring it home and wash it thoroughly. After this, mix some turmeric in hot water and put the liver in it for 10 minutes, so that all kinds of dirt gets cleaned with it. Then take it out and keep it aside.

After that heat oil in the pan. Add cinnamon, black pepper and bay leaves in it. Then add finely chopped onion on top and fry until it turns golden. Now add ginger-garlic paste and fry until the rawness goes away. After this add turmeric, cumin powder, coriander powder and red chilli and cook while mixing well. The spices have to be cooked on low flame and for a long time because this is where the real flavor comes from. When the spices start releasing oil, then assume that they have been roasted properly.

Now add pot-liver and fry for 10 to 15 minutes while stirring on medium flame. Then add some water and finally cover and cook on low flame for 30 to 35 minutes. When the pot-liver becomes soft and the gravy becomes thick, remove it from the gas or stove and garnish with green coriander leaves. If you want, you can also crush a little garam masala or a little kasoori methi and add it on top. It completely depends on your choice.
