Gobhi Kofta Kadhi Recipe: Cabbage Kofta Kadhi is a delicious and light dish much liked in every home. To make this, first of all fresh cabbage is selected, because good cabbage enhances the taste of koftas. Cabbage is grated and a little gram flour, finely chopped green chillies, a little ginger, salt, coriander leaves and turmeric are added to it.
By kneading the mixture well, small round koftas are prepared. It is important to fry these koftas on medium flame till they turn golden brown, so that they get cooked well from inside and do not break when added to the kadhi.
The more the curry is cooked, the more it will taste.
To make the base of kadhi, curd and gram flour are beaten well in a big vessel and lumps are removed. Turmeric, red chilli, salt and water are added to it as per taste. The mixture is kept to cook on low flame while stirring continuously. When the kadhi starts boiling, it should be cooked for 10–15 minutes so that the raw smell of gram flour goes away completely. The slower the Kadhi is cooked, the better it tastes.

Now comes the turn of making tadka. Heat some ghee in a small pan, add cumin, asafoetida, fenugreek seeds, dry red chilli and some chopped garlic and fry till it turns golden. If you wish, you can also add a little ginger and curry leaves, which further enhances the taste of the curry. As soon as the tadka is ready, add it to the hot curry and mix it well. This brings out layers of flavor in the curry and makes it even more aromatic.
Garnish with coriander
Finally, pre-fried cauliflower koftas are added to the curry. After adding the koftas to the curry, they should be cooked for 5-7 more minutes, so that they absorb the flavor of the spices and curd properly. After turning off the gas, add green coriander on top, cover it and leave it for 2 minutes. Hot Cauliflower Kofta Kadhi can be served with rice, roti or paratha. It is a perfect recipe that is light, tasty and full of fresh aroma, which is loved by people of all ages.
