What is Nasi Kerabu?It is a Malaysian dish that is considered to be a variant of Nasi Ulm. Blue rice is eaten in it, besides dry fish, fried chicken, crackers, pickles and salads are eaten with great fervor. It is generally practiced to be eaten with Solok Lada but sometimes it is also eaten with Keropok. For this dish, rice is also cooked with turmeric in some places, or in white color only.

Is blue color a natural or artificial color in blue rice? The answer is natural. In Blue Rice, rice is cooked with leaves of Aparajita flower, which merges blue or purple color with rice. This flower is also known as Butterfly P fruit in English. In other metros including Mumbai, Blue Rice has included some restaurants in its menu.

As many foreign dishes have been Indianized and become, similarly the experiments have been started to introduce this dish according to the country. According to the ToI report, Chef Tarun Sibal is serving Blue Rice with Yellow Tofu Curry in his restaurant. Similarly, in some other places, blue rice is being served with different curries or side dishes.
How is Blue Rice Made?
Jasmin rice is said to be suitable for this dish. This rice is originally from Thailand, which is quite long. This rice has to be cooked like normal rice and after that you have to add Aparajita flowers to it. According to Chef Sibal many flowers have to be mixed to bring a good blue color. Sibal also says that the taste of this blue rice is enjoyed along with the Asian curry.
