Easy recipe to make Peanut Khoya Laddu
1. Prepare powder by roasting peanuts
First of all, lightly fry the peanuts. Keep in mind that it should not be roasted too much, otherwise it will start getting smoky flavor. After roasting, let it cool completely and then put it in the mixer and make a light coarse powder. Keep in mind that the powder should not be like a paste, if it becomes too fine or sticky then the texture of the laddu will change and there will be difficulty in setting the laddu.
2. Roast khoya and make it aromatic
Put 1 tablespoon ghee in a pan and let it heat slightly. Now add khoya to it and fry it on low flame while stirring continuously. While roasting khoya, always keep the flame low, otherwise it may stick to the bottom or even burn. When the color of khoya starts turning light golden and the aroma starts coming out, then turn off the gas. Let it cool for a few minutes, so that the khoya does not get too hot while adding the rest of the ingredients.
3. Mix all the ingredients together
Now add roasted khoya in a big bowl. Mix peanut powder, powdered sugar and cardamom powder in it. If you want the laddus to taste even richer, you can also add a little chopped cashew-almonds to it. Keep in mind that the mixture should be lukewarm, if it is too hot, the sugar will melt and the mixture will become sticky, which will cause difficulty in tying the laddus.
4. Make laddu and set it
Now take a little of the mixture and make round laddus with your hands. If you feel that the mixture is a little dry and the laddus are not setting properly, then add one spoon of ghee and mix well again. While making laddus, apply a little ghee on your hands, this makes the laddus very smooth and do not stick.
5. Correct way to store laddus
Leave the prepared laddus open for 10-15 minutes, so that they set properly at room temperature. After this, they can be stored comfortably for 2-3 days by filling them in an airtight box, if the weather is a little cold, then they remain good for 4-5 days also.
