It is made in the native manner in other shops including Rana Sweets located near the bus station of the city. Its discussion is not only limited to Bageshwar but is also spreading rapidly among the surrounding districts and travelers. Customer Mahipal Singh Dosad says that the specialty of Brown Barfi is the traditional and indigenous way of making it. It is prepared by cooking khoya made from fresh buffalo milk on low flame and pure desi ghee. It is continuously cooked on low flame for hours, until its color becomes dark brown and a characteristic aroma starts emanating. It is this caramelized quality of milk that gives it a completely different taste from normal barfi.
