tradition of keeping it in dew overnight and beating it
A tourist named Devendra, who reached Varanasi from Bokaro, said in a conversation that we ate it for the first time, it is very tasty. It was not very sweet, but tasted good. Let us tell you that as soon as winter knocks in Varanasi, a sweet fragrance of Malai starts floating in the narrow streets of Old Kashi. At 3 in the morning, when the city is still asleep, the tradition of churning milk by keeping it in dew overnight begins near the ghats. This is the reason why the people of Banaras make the cold morning even more special by taking the first bowl of Malaiyo with the first ray of the sun.
This is how Varanasi Malaiyo is made
The shopkeeper selling Malaiyo said that it is a good kind of sweet for the cold season. To make Malaiyo, milk is mixed with sugar and saffron and first cooked on low flame. After this, this milk is kept under the open sky overnight, so that dew drops can fall into it. The milk is cooled by the dew falling in winter and then rabri, cream, saffron and cardamom are added to it and churned. The foam or cream coming out of it is collected, which is called Banarasi Malaio. Its specialty is that it dissolves as soon as it is placed in the mouth. The shopkeeper also told that it is cooled by keeping it between dew drops overnight. The great thing is that dew drops are considered good for the eyes. In this case it is also healthy.
