Ingredients required for Arhar Dal
Arhar dal – 1 cup
Water – 3 cups
Turmeric – half teaspoon
salt to taste
Tomato – 1 finely chopped
Onion – 1 medium
Green chilli – 2 chopped
Garlic – 5 to 6 cloves
Ginger – a little grated
Asafoetida – a pinch
Cumin – 1 tsp
Dry red chilli – 2
Coriander leaves – a little
Ghee – 2 tbsp or oil
Red chilli powder – 1 tsp
Garam masala – half teaspoon
Right way to boil lentils
First of all, wash arhar dal thoroughly and soak it for 10 minutes. This cooks the dal quickly and gives a creamy texture. Add lentils, water, turmeric and salt in the cooker. Now cook it for 3 to 4 whistles. Switch off the gas and let the cooker cool down naturally. When you open the cooker after some time, the dal will look absolutely soft and smooth. If the dal seems a little thick then adjust the consistency by adding some hot water.

After adding tempering, let the dal cook on low flame for 3 to 4 minutes. Due to this, the spices dissolve well in the dal and the flavor of the dal increases manifold. Finally add some garam masala and finely chopped coriander leaves and turn off the gas.

If you like hotel style dal tadka then you can try smoking technique. For this, heat a small coal on the gas until it turns red. Place a steel bowl between the pulses and place coal in it. Put some ghee on the coal and immediately cover the dal with a lid. Open the lid after 1 minute. The dal will get smokey and amazing flavour.
