In this murabba, jaggery, honey or sugar candy is used instead of sugar. Jaggery is warming and rich in minerals, honey has anti-bacterial properties and sugar candy is a light and diabetic-friendly alternative to natural sweeteners. With these three options, murabba remains tasty and healthy too.
Traditional murabba takes hours, but in grandmother’s technique the amla is steamed beforehand. Due to this it becomes soft quickly and absorbs the syrup easily. Due to steaming, the murabba gets ready in less time and the amla starts appearing slightly transparent.
The most important process of this instant murabba is pricking. By making deep holes with a fork, the syrup reaches inside. After this, the steamed gooseberries are cooked on high flame in syrup made of jaggery or sugar candy on low flame. After this, adding cardamom, dry ginger or black salt further enhances its taste.
Sugar-free Amla Murabba is rich in Vitamin C and antioxidants. It strengthens immunity, improves digestion, relieves constipation and nourishes hair. Amla is also considered an excellent option for making the skin glowing and improving eyesight.
