The real fun of Litti lies in its outer crispy shell. For this, mix salt, celery and some baking soda in wheat flour. Now add melted ghee to it and knead it well with hands. While kneading, make sure that the dough is neither too hard nor too soft. Once kneaded, cover it and keep it aside for some time.
Making Sattu Filling
The main part of the filling inside Litti is Sattu. Add ghee and salt as per taste in it. Then add finely chopped onion, green coriander, grated ginger, chopped green chilli and some cumin. If you want, you can also add lemon juice or pickle masala. Prepare this filling without water, so that the mixture gets mixed properly while filling in Litti. Now make balls of the dough, fill the filling inside and close it well from all sides.

Brinjal, tomato and potatoes are required for chokha. Fry the brinjal and tomato on low flame until their skin turns black. You can also make cuts in the brinjal and add garlic and green chillies. Instead of boiling the potatoes, lightly fry them on a pan. Then peel and mash these three vegetables.

Add chopped onion, ginger, green coriander and lemon juice to the mashed vegetables. Add salt as per taste and one spoon mustard oil. It will bring desi taste and spiciness.
Bake Litti in Cooker
Apply some ghee on the bottom of the cooker and do not pile the litti. Remove the whistle and rubber on the lid, so that the litti bakes in dry heat. Bake the Litti on low flame and keep turning it occasionally. In this method the litti gets cooked evenly and quickly from all sides.
