Gajar Ki Barfi Recipe: Everyone makes carrot halwa a lot in the winter season, but make carrot barfi also once. It can be stored for several days and served even when guests come. Know how to prepare.
To make barfi, first of all you have to grate the carrots well. You can grate 1 kg of carrots and then add two tablespoons of ghee in a pan and after it gets heated, add the carrots and let them fry lightly.
When it gets lightly fried, add two more spoons of ghee to it and fry again. Then you have to add about half a kilogram of khoya in it and it is better if the khoya is also grated, otherwise it should be in small pieces. Along with this you also have to add at least one loaf of sugar.
After adding all this, cook it again for 10 minutes and again add one spoon of ghee and then cook well for at least 15 minutes. After this you have to add cardamom powder in it, you can add cashew nuts, pistachios, almonds, any dry fruit of your choice.

After this, mix it and take it down. Now you have to take a container and apply butter in it and spread whole carrots on it and leave it to rest for at least 6-7 hours.
After this, with the help of a knife, cut it into bars and apply silver paper on top and serve carrot barfi to your guests. It tastes so delicious that once you make it, you will eat it again and again.
One thing to keep in mind is that when you grate the carrots and put them in the pot, you should not fry them too golden. That means you have to fry for only 5 minutes. After adding ghee, fry again for 5 minutes. If you don’t understand then take a timer.
After making it, keep it in the fridge and you can easily enjoy it by keeping it in the fridge for 10-15 days. There is no worry about it getting damaged.
